The suribachi is the Japanese equivalent of Western mortars and pestles, used for grinding grain or herbs. The ridges on the inside of the suribachi, help grind ingredients without bruising them, to develop perfect textures and flavours.
They are ideal for preparing Japanese sesame-based sauces, for example, or for general use as a kitchen mortar. In Japan, the finished sauce is often presented in the suribashi it was made in.
